Recipes for Spring

 

Make a spring chicken.

Like any good restaurant, we like to refresh our menus seasonally—if only to keep ourselves out of a rut. Our bar for what makes the cut? It’s got to be delicious, first and foremost. From there, it needs to be easy, while looking (and tasting) like you spent lots of time. Well clear your plates and get ready to fill in your meal-prep calendar—because we’ve got your spring cuisine. 

The kids: they’re alright.

Part of the beauty of the “meta” (lowercase meta) involved with content creation today? One can get the gist of TikTok’s greatest hits without even opening TikTok. That’s thanks to a whole cottage industry of outlets telling us what’s trending, along with offering some judgment of whether it is indeed worthy of trending. Luckily, we can ourselves report firsthand that this green goddess salad is one hundred percent Verse approved. (We’ve been adding chicken to ours for the added protein.)

Dutch, dutch baby.

You may be familiar with the classic (sweet) version of a dutch baby (if not, head here immediately), but we have enjoyed getting to know its savory side. This herby dutch baby with smoked salmon is not only beautiful, it’s delicious and comes together quite easily. Now that we’ve tried it, we think it could be a great vessel for other toppings: some cheese or prosciutto, perhaps? 

Oh sheet.

If you’ve ever made traditional coq au vin, you know it is quite the process. The last time we attempted it, we used every pot and pan we owned. This version not only comes together all on one sheet pan, but has also been lightened for warmer weather with the substitution of white wine for red.

A total crock.

While the slow cooker may conjure thoughts of cooler temps and fall flavors, we see no reason to banish it when temps climb. In fact, we’d argue that its highest and best use comes when the mere thought of standing over a stove breaks a sweat. Enter this Green Chicken Pozole, still just light enough for warmer days. We like to garnish it with fresh radishes and some lime juice.

Set it and forget it.

Besides our favorite Lime Cracker Pie, these butterscotch custards are another favorite no-bake dessert for warmer weather. They are easy to prepare ahead and just pop in the fridge. And butterscotch? It’s the nostalgic comfort food of confections.
